Homemade Almond Milk

Here is a simple recipe for homemade almond milk. The great thing about this recipe is its so easy and it can also be used for other types of nut milks.
Almond milk is a fantastic lactose-free, non-dairy milk alternative for those with dietary sensitivities to dairy. It works well in just about any smoothie that you would otherwise use regular milk including favorites such as our Classic Strawberry Banana Smoothie, Chocolate Pudding Post Workout Smoothie, Blueberry Breakfast Smoothie and many more.
Unlike the almond milk you buy in the store, the almond like in this recipe only has three ingredients! And it doesn’t have any fake stuff or preservatives which makes it way healthier!
Depending upon your preferences, make unsweetened, plain almond milk or you can add additional sweeteners or spices to change the taste profile. Also you can play around with the consistency and add extra filtered water if you prefer a thinner, less rich, more cost effective almond milk.
When selecting your almonds, make sure to get raw, unflavored, unsalted almonds.
To make your homemade almond milk…
Start by placing the almonds in a bowl, covering them with filtered water Then let them soak for 8-12 hours. Soaking the almonds is important because it will reduce the phytic acid levels in the nuts. Grains, nuts, and seeds contain varying amounts of phytic acid. Too much phytic acid can be bad because it prevents the absorption of iron, zinc, and calcium and may promote mineral deficiencies. Small amounts of phytic acid may be ok but reducing your intake will help you absorb the minerals you’re getting from your food.
After your almonds have soaked long enough, drain and rinse the nuts and discard the soaking water. Don’t pour your soaking water into the blender. Add the almonds into a blender with the rest of your ingredients including new, filtered water. Blend starting slow if possible and working your way up to a high speed until completely smooth. Make sure your blender lid is on tight so liquid doesn’t overflow! Taste the almond milk and adjust to taste. If you are making sweetened almond milk add more dates if needed.
When it tastes just right, strain the contents from the blender through a nut milk bag preferably or a piece of cheesecloth into a glass milk jar or container. Squeeze the contents to get all the liquid out. When your done, store your almond milk in the fridge with a lid sealed tight. If sealed, you can keep your almond milk for a few days in the fridge.
This recipe makes about 4 cups or 32 oz of almond milk.
Optional Super Boosts:
Want to make sweetened almond milk? Make naturally sweetened almond milk by add 2-4 dates. Make sure to remove the pit.
For vanilla flavored almond milk, add 1/4 tsp of vanilla powder or 1 tsp vanilla extract

When done making your almond milk, save your almond pulp to make flour or crackers.
