Tropical Cauliflower Mint

Ingredients

Coconut Water

(1 cup)

Pineapple (1/2 cup, frozen)

Banana (1/2 banana, frozen)

Cauliflower (a few small pieces)

Mint (4-6 leaves, to taste)

This is a light, refreshing, minty tropical treat. It has a soft, sweet taste that starts with pineapple and ends with a kick of mint. And you can hardly taste the cauliflower.

This one only has five ingredients and is a great way to sneak in a veggie.

Cauliflower is packed with nutrients and has anti-inflammatory and anti-aging properties. The mint adds a cool taste and helps with brain function and digestion.

Start by adding the coconut water, then the cauliflower, pineapple, and banana. At least one of the solid ingredients should be frozen or you’ll want to add some ice to give it that frozen texture. Blend for a bit and then add fresh mint leaves and re-blend to taste.

Makes about one 16oz serving

Use coconut milk for a creamier smoothie

Add some frozen coconut meat or coconut flakes to boost the coconut taste

Add a bit of MCT oil for energy and weight loss and a brain boost.
